1 pound low fat ground beef
1/2 cup chopped onion
1 clove garlic
4 cups beef broth
4 cups water
2 - 14 ounce cans tomatoes (I prefer whole tomatoes but you can use diced)
16 ounce frozen mixed vegetables
3 potatoes, peeled and cubed
1 bay leaf
1/4 teaspoon marjoram
1/4 teaspoon thyme
3/4 cup elbow macaroni
1. Brown hamburger in a skillet. Drain off the grease and remove the meat from the skillet.
2. In the remaining grease in the skillet, cook the onion and garlic until translucent.
3. Place the cooked hamburger, garlic and onions in a stock pot. Add in remaining ingredients.
4. Bring to a boil. Reduce heat, and let soup simmer until macaroni is done. Remove Bay Leaf before serving.
