I love fixing easy meals during the week. Meals that require little work to prepare and get on the table. One of my favorite week night meals is Pork Fajitas prepared in the crockpot.
Family Size Package of Pork Chops - Breakfast or Pork Sirloin Chops tend to work best
1 green onion, sliced into thin strips
1 green pepper, sliced into thin strips
2 packages of taco seasoning
1 1/2 cups water
1. Cut pork chops into thin strips, and place in the slow cooker.
2. Add in sliced green peppers, onions, taco seasoning, and water. Mix all ingredients together, being sure to coat pork with taco seasoning.
3. Cover and cook on low heat for six to eight hours. The longer it cooks, the more tender the meat will become. When fajita meat is done there will be excess liquid in the pot, drain it off.
4. Serve fajita meat on fajita shells, and top with your favorite fajita toppings.
Recipe makes enough for 2 to 3 fajitas per person for a 6 person family, with leftovers.
