It is soo hard to believe that it's already the last week of August. Menu planning has been especially hard for me because of all of the after school activities we have going on. I am going to be using my crockpot a lot over the next few weeks. It also means that I am going to have to be creative in looking for meals that are quick and easy while not eating the same thing every week.
Another thing that is going to put my menu planning juices to the test this coming month is the fact that last month we had to dip into our savings. With the holidays coming up I really want to replace that money. So, we are going to be using some money from our fun budget, as well as shave a little money off of our food budget ($25 to $40 each week) to accomplish this. I will still have some money for grocery shopping this month, just not as much. This is one of the reasons that I stockpile. This month we can easily scale back our grocery shopping and still not have any problems putting dinner on the table.
So here is what I have planned for this week:

Monday - Leftover Redo - BBQ chicken made from leftover chicken breasts from Sunshine's birthday party, Scalloped Potatoes, Baked Beans
Tuesday - Pork Piperade served over white rice
Wednesday (our only weeknight where we all are at home) - Turkey Potpie with Cheddar Biscuit Crust
Thursday - White Bean and Ham Soup (this has been on the menu the last two weeks and skipped both times)
Friday - Pizza Braid (Can you believe this hasn't been on my menu since November 2009?)
Saturday - Eating Out Before Church
Sunday - Honey Thyme Pork Chops, Cheesy Hot Potatoes, My Grandmother's Green Beans, Italian Herb Rolls
