Menu Plan Monday, April 23rd to April 29th

Last week was a busy week around here and I haven't been feeling my best.  You know how it is when you aren't sick enough to stay in the bed all day but you aren't feeling good either.  It's almost more frustrating than being full blown sick, you don't feel good enough to do anything but you don't feel completely awful either. 

This will be week number three for my husband on The Cardiac Diet.  He is adjusting pretty good to the diet, and everyone in the house has been eating the heart-healthy meals.  He has dropped a total of 10 pounds now, but the scale hasn't moved for me yet.  How does that happen?  I guess I need to look at it as the goal is to be healthier not necessarily skinnier!

We tried several new recipes last week since we are having to change our entire way of cooking and I must say they were all hits.  So if you are looking for heart healthy recipes you might want to check out my menu from last week, as all of the recipes we used last week will be added to our regular cooking rotation and I highly recommend them.

Here's what I have on the menu for this week:

Monday:  Baked Cod, Crispy Seasoned Oven Fries (we have tried these a few times now and love them)

Tuesday:  Honey Crusted Chicken (new recipe), Classic Boston Baked Beans (although we will be leaving off the bacon, the recipe is in the Mayo Clinic heart healthy section but bacon is listed as a big no-no on the list from my husband's doctor)

Wednesday:  Slow Cooker Chicken Fajitas (recipe to post soon)

Thursday:  Baked Salmon Patties (will be using a variation of my normal Salmon Patty recipe and will post the recipe soon), Crispy Seasoned Oven Fries

Friday:  Pineapple Chicken with brown rice instead of white rice

Sunday:  leftover night

Tempt My Tummy Tuesday - Baked Swai

As I said yesterday my husband is now on The Cardiac Diet which means my way of cooking has changed completely.  This Baked Swai recipe is based upon the Sicilian-Style Cod recipe in this month's Redbook Magazine with a few changes.  The original recipe called for Italian Style Bread Crumbs but I used the plain breadcrumbs because they were lower in sodium.  Another change I made was the recipe called for kosher salt to be sprinkled over the rolled fish, which I left out.


4 - 6 Ounce Swai Fillets
1/2 cup Panko Breadcrumbs
1 Tablespoon Each Dark and Golden Raisins
1 Tablespoon Lemon Juice
2 tablespoons Parsley


1.  Preheat Oven to 400 degrees and coat pan with olive oil cooking spray.

2.  In a small bowl comine all ingredients except the fish fillets.

3.  Spoon about two tablespoons of the breadcrumb mixture onto each fillet and roll.  I had to use a toothpick to hold the fillets in the roll.

4.  Drizzle a small amount of olive oil over each rolled fillet and sprinkle remaining breadcrumbs over rolled fillets.

5.  Bake for 20 to 25 minutes or until fish is opaque at it's thickest part.

We ate with wild rice and a piece of garlic toast.

Menu Plan Monday, April 16th to 22nd

Last week I didn't post a menu plan.  The reason wasn't because of lack of time to post it, it was because I honestly had no idea of what to cook.  On Good Friday my husband received a call from his doctor with test results that weren't good.  According to the doctor my husband was/is on the verge of a major heart attack.  Along with medications he was also put on The Cardiac Diet.  For the last week I have been reading, reading, and reading everything I can about it. I still don't have it all figured out but it is quite obvious that my entire way of cooking has to be revamped.  So this week will be full of new recipes as we learn how to adapt to this new diet.

Monday - Italian Style Baked Cod (Redbook Magazine)
Wild Rice

Tuesday - Sandwiches (no one will be at home at the same time to eat)

Wednesday - French Country Chicken with Mushroom Sauce, served over yolkless egg noodles

Sunday - Leftover Night
