Menu Plan Monday, August 27th to September 2nd

It is soo hard to believe that it is already a new week.  This week has flown by.  In fact it seems like the last few years have flown by.  Sunshine will be turning 12 on Thursday!  I have no idea how that happened!  We will be having a birthday party for her on Saturday.  Last week I made a Slow Cooker Bolgonese Sauce that I had found on Pinterest (love that site).  It was a huge hit with the family and it is what I am going to cook for her party.  Nice and easy!
 
I am also going to be on a budget this week so we are going to be eating 100% out of our pantry this week.  No grocery shopping except for her birthday party!

Menu Plan Monday, August 20th to 26th

This week is going to be a very busy week for me, so I will be relying heavily on my crockpot and freezer meals to get dinner on the table.  Transitioning into this super busy schedule is going to be a lot of work but hopefully the transition will be smooth.

I have been putting in a lot of work to make cooking easier for me (I will blog more about this on Wednesday), and it has been paying off.  I really like the idea of planning out all of our meals for the day, and will continue to do this, even if breakfast and lunch are just basic meals.

Week In Review, August 19th


This week has been a very busy week for our family, and was our last week before our busy fall schedule starts next week.  I am looking forward to the changes that are coming, and know that we have a lot on our plate, but I feel that God is leading us.  With him in the lead I know that there is nothing too big for us.  I have been praying for the strength and energy it is going to take to get through it.  I will be homeschooling three kids, with co-op on Mondays where I teach three classes.  In addition to that I will be going to college full-time with fifteen credit hours scheduled, my classes will take up most of Tuesday and Thursday, with an accounting class on Wednesday nights.  Add in a very busy Etsy business, as well as a husband with a chronic illness, and I have a lot on my plate.  In addition to all of the above, we have weekly gymnastics/cheerleading for Sunshine, violin lessons for Sunshine and Little Man, and soccer for Little Man coming up.  My head hurts just thinking about it! 



Now, let’s talk about this last week.  It was our first week of co-op and my kiddos loved it!  I feel so blessed and led by God when it comes to this co-op.  It is the co-ops first year in existence, and there are some very Godly women who are teaching the kids.  I am soo excited by this opportunity, and am looking forward to seeing what God has in store for my family there.



We spent Tuesday, Wednesday, and Thursday getting into our typical homeschool schedule.  Bubbles and Sunshine have been working on their schoolwork for quite a while, but it was Little Man’s first week doing his schoolwork.  I have found it very motivating for him to offer him technology time in exchange for completing all of his work with no whining. 



Bubbles and Sunshine started their small groups for middle schoolers (I have two middle school girls, ACK!) on Wednesday night.  While they were in their small group The Mister, Little Man and I had a chance to spend some time on our own.  We don’t always get that one on one time with Little Man so it was nice.  Unfortunately starting this week I will be in class during this time and I won’t get to have that time with him but he will still get that one on one time with his daddy. 



I have been wanting to have a yard sale for quite some time now and have been putting it off because let’s face it I just didn’t want to have to do the work.  I finally bit the bullet, and we had a yard sale yesterday.  We had a lot of luck, and got rid of quite a bit of “junk”, what was left over we took to the Goodwill.  It was nice getting that extra money to put towards our upcoming vacation, while also getting rid of some of our clutter.  I am just really, really glad it is over.

Menu Plan Monday, August 13th to 19th

Last weeks doctor's appointments and unexpected events caused us to miss a few meals last week which I am carrying over to this week since the shopping for them has already been done!  YAY! 

The Italian Vegetable Soup from last week was a huge hit!  Which suprised me.  Sunshine and The Mister are not big on vegetables, and Sunshine dislikes anything that is "mixed together".  They both loved this though.  I was out of kidney beans so we left them out.  I also only put macaroni noodles in the kids soup.  The soup base tasted awesome for this, which was great, it is definetly going on our menu in the future.

Week in Review, August 11th

This week has been quite a tumultous week in the Modern Day Mom household.  We have had so much going on, and doctor's visits have turned our plans for the rest of the summer. 

As I said last week Sunshine was coming off of the flu and Little Man was getting over pneumonia.  However, they weren't the ones whose doctors visits were scary.  The Mister was in a car wreck in 2008 where among other things he broke three vertebrates in his neck.  He had a failed spinal fusion a few months later, and has struggled with issues from it ever since.  On Tuesday we learned from an MRI that he now has a bone spur that is in contact with his spinal cord.  They don't know exactly how much damage it has caused but he is already showing major weakness on his left side from it.  Yesterday (Friday) he had a myleogram done to see how much damage is done.  So now he is spending the weekend and the beginning of next week flat on his back in bed recovering.  We won't know the results for about a week, as his neurosurgeon is transferring from one hospital affiliation to another that is closing his office down for the week next week.  The Mister is his first appointment when he reopens so now we wait.

Since we knew what was ahead of us with The Mister we took the kids to the lake for probably the last trip of the summer.  We had a blast!



We spent the day swimming and had a picnic lunch. 

It was a nice break from reality.

Next week should be an interesting week for us as well.  We start our homeschool co-op on Monday and the kids are so excited!  Other than that though it should be a low key week for us.

Everybody seems to be on the mend after last week's battle with illness.  It was a long week where nothing was accomplished, so I am hoping for a much better week this week.  This week I am going to be doing something a little different and planning out all of my meals, I am hoping that this will make my life just a little bit easier.

Week in Review, August 4th

This week in The Modern Day Mom house has not been much of one to brag about.  We have been sick, sick, and sick.

Last week Little Man started getting sick on Thursday afternoon, when of course the doctors office was closed on Friday.  It never fails, my kids always get sick as the doctor's office closes.  So we spent all of last weekend laying around, and trying anyway we could to make him feel better.  We debated taking him to the ER but decided to wait until Monday to take him to the ER.  I am never any good at making that call. 

Monday was my birthday (YAY!) but I had to go to school for my last final of the summer semester.  While I was at school my husband took Little Man to the doctor to find out he had pneumonia.So no big celebration for my birthday and so much for my big plans for summer fun while I was out of school and before school for the kiddos start full-time.  We are going back to homeschooling this year, and they will start co-op on the 13th.

We spent the rest of the week laying around the house trying to get to feeling better when Sunshine started getting sick herself.  So Friday was spent in the doctor's office with her.  They sent her to the hospital to have some labs run because there has been a Swine Flu scare with pigs at our local fair this week.  UUUGGGHHH!  The doctor later called only to say that she has what she suspects is a virus.  Thank goodness!
