Italian Chicken and Mozzarella Pasta



I can't help it, I can't follow a recipe to save my life.  I find a recipe, inspiration strikes, and the recipe ends up being nowhere near what is was originally.  That's what happened with this recipe.  It started off as something totally different....

Ingredients:
1 pound of chicken breasts cut into chunks
2 - 16 ounce cans of diced tomatoes
2 tablespoons minced garlic
1 1/2 teaspoons red pepper flakes
1 cup milk
1 cup mozzarella cheese
1 box penne pasta


1.  Cook chicken chunks in lightly oiled pan.  While chicken is cooking start your noodles.


2.  Once chicken is cooked all the way through mix in canned tomatoes with juice, garlic, red pepper flakes, and milk.  Let simmer on medium until the sauce has cooked up some and thickened.  

3.  Once the sauce has thickened up, add in mozzarella cheese.  Cook for an additional two minutes or until cheese is melted throughout.



4.  Once cheese has melted, remove penne pasta from water and add it to the sauce.  Remove from heat.



We served this with my Italian Herb Rolls.
