Menu Plan Monday, June 5 to 11, 2017



With the summer weather heating up no one around here seems to be in the mood for heavy meals and it has me looking for light cooking ideas.  This week is a mix of old and new recipes that hopefully will be the right balance of filling and light.

Menu Plan Monday, May 29 - June 4, 2017


We are just back off of a spontaneous and surprise birthday trip to Disney for my 14 year old son where we ate horribly!  Well, let me rephrase that, we ate wonderfully, but it wasn't very healthy and now my body hates me.  I can't wait to get back to healthy eating and have tried to find some delicious, healthy, and easy meals for this week.  

Here's what I have planned for this week:

Monday
Dinner - Eating Out

Tuesday
Breakfast - Canadian Bacon, Egg White Scramble, Sauteed Baby Spinach
Dinner - Baked Ranch Parmesan Pork Chops, roasted red potatoes, green beans

Wednesday
Breakfast - Crustless Breakfast Quiche
Dinner - Red Beans and Rice with Turkey Smoked Sausage

Thursday
Breakfast - Oatmeal, Toast, Strawberries

Friday
Breakfast - Canadian Bacon, Egg White Scramble, Sauteed Baby Spinach
Dinner - Baked Salmon, wild rice, asparagus

Saturday and Sunday

It's been several months since I have posted a Menu Plan Monday.  I have been flying by the seat of my pants here lately and the chaos is driving me nuts.  So we are back to meal planning.
